No-Bake Peanut Butter Balls

Ingredients

1/4 cup ghee

1/4 cup organic peanut, almond, or sunflower seed butter

1/4 cup agave

1/2 teaspoon pure vanilla extract

Pinch of sea salt

1 cup PBfit organic peanut butter powder


Chocolate Coating

2 tablespoons ghee

1/4 cup dairy-free chocolate chips, or chocolate of choice

Directions

1. Melt the ghee and peanut butter in a sauce pan over medium-high heat. Remove from the heat and whisk in agave, vanilla extract, salt, and peanut butter powder.

2. Form 6-8 balls with a 1 tablespoon cookie scoop and place them on a plate lined with parchment paper.

3. Make the Chocolate Coating: In a small pot, melt the ghee and chocolate chips over medium-high heat, whisking continuously. Using the cookie scoop, spoon the chocolate over the balls.

4. Refrigerate the cookies for 1 hour or until the chocolate sets and serve. Store leftovers in the refrigerator.
